Enchilada Sauce

  • 1/4 cup canola oil
  • 1/4 cup flour
  • 1/2 cup chili powder
  • 1 teaspoon garlic powder
  • 1 teaspoon salt
  • 1/2 teaspoon cumin
  • 1/2 teaspoon oregano
  • 4 cups vegetable broth
Heat oil in saucepan and stir in flour until dissolved.  Stir in remaining seasonings and slowly stir in broth, whisking constantly to avoid lumps.  Simmer 10-15 minutes until thickened slightly.
