Spinach Artichoke Zucchini Bites

4 oz. cream cheese, softened

2/3 cup shredded mozzarella

1/4 cup shredded Parmesan

1/2 cup chopped artichoke hearts

1/2 cup chopped spinach

2 TB sour cream

1 egg, beaten

2 medium zucchini, cut into rounds

salt & pepper to taste

optional: red pepper flakes, minced garlic


1. Preheat oven to 400. Place zucchini rounds on oiled baking sheet.

2. Combine remaining ingredients in medium bowl. Spread about 1 TB mixture on each zucchini round.

3. Bake until zucchini is tender, about 15 minutes.  Broil an additional 2-3 minutes until browned.
