Roasted corn (air fryer)

16 oz. bag frozen corn, unthawed

1/2 cup chopped onion*

4 garlic cloves,  minced*

3-4 TB butter, melted

1 tsp salt

1/2 tsp pepper

1/4 tsp paprika  

Combine ingredients in a 6 inch metal bowl that fits into the air fryer basket.  Set fryer to 400 and cook 12 minutes, stirring halfway through.

*leave these out for picky eaters

Falafel (air fryer)

Makes 12 balls




Two 15 oz. cans garbanzo beans, drained & rinsed

1/2 cup flour

1/2 cup chopped parsley

1/4 cup chopped cilantro

1/4 cup lemon juice

2 TB tahini

1/3 cup chopped onion

1/4 cup olive oil

1 tsp salt

1/4 tsp pepper

1 cup bread crumbs

For serving: pitas, lettuce, tomato, cucumber, yogurt or tahini sauce

In a blender, combine all ingredients except for the bread crumbs. Pulse until mixture is well combined.  Place bread crumbs in bowl.  Using wet hands, form the falafel mixture into balls and roll in bread crumbs to coat.  Working in batches, place in the air fryer and spray with cooking oil.  Set air fryer to 375 and cook 18 minutes, turning halfway and spraying with more oil.  Serve in pita with lettuce, tomatoes, cucumber, & sauce of choice.

Southwest egg rolls (air fryer)

1 cup corn kernels

15 oz. can black beans, drained & rinsed

1/2 cup pico de gallo

1.5 cups shredded cheddar

1 tsp chili powder

1/2 tsp oregano

1/2 tsp garlic powder

1 package (20 count) egg roll wrappers

1. In a large bowl, combine the corn, beans, pico until well mixed.  Add the cheese & spices and mix well.  

2. Place a wrapper on a plate. Brush the edges with a bit of water, then place a heaping 2 TB of the mixture in the middle. Fold one edge of the wrapper over the filling, fold in the sides, and roll up.  Press the seam to secure. Repeat with the remaining filling and wrappers.

3. Set the air fryer to 375.  Working in batches, put the eggs rolls in a single layer; spray with cooking oil.  Cook for 7 minutes, turn, spray with more oil, and cook another 7 minutes until crisp.

Italian tofu steaks (air fryer)

1.5 blocks tofu (24 oz)

2 TB olive oil

1/2 tsp basil

1 tsp oregano

3/4 tsp smoked paprika

1/2 tsp garlic powder

1/2 tsp salt

1. Press the tofu to drain water. Cut the half block in two and cut the full block into 4 pieces.  In a large glass baking dish large enough to hold the tofu slices, whisk together the remaining ingredients.  Add the tofu to the dish and turn to coat.  Let stand for 10 minutes.

2. Place tofu in the air fryer (either fry in batches or use a raised rack). Set the fryer to 375. Cook for 20 minutes or until the tofu is golden brown.
