Tomato-Barley Soup with Seitan

1 TB oil
1 cup chopped celery
½ cup chopped onion
½ cup uncooked quick-cook barley
1 ¾ cup water
14.5 ounce can diced tomatoes
14.5 ounce can tomato sauce
8 ounce package seitan, cut into bits
1/2 tsp basil
1/2 tsp oregano
salt & pepper to taste

Heat oil in medium pot; saute celery & onion until fragrant.  Stir in rest of ingredients; bring to low boil, reduce heat to low; cover & simmer 20 minutes.
