Aimee’s Italian Pasta Salad

Makes 6-8 side dish servings

12 oz. whole wheat rotini pasta
1 1/2 cups grape tomatoes, halved
8 oz fresh mozzarella, cubed
¼ cup grated parmesan
3-4 large basil leaves, chopped
¼ cup olive oil
2 TB red wine vinegar
1 tsp dried oregano
1/2 tsp garlic salt
1/4 tsp black pepper

1. Cook the pasta according to package directions; drain well, cool, & transfer to bowl.
2. Add the tomatoes, mozzarella, parmesan & basil and stir gently.  Add oil, vinegar, garlic salt, oregano, & pepper; mix well & refrigerate until ready to serve.
