Zucchini Quiche


3 small zucchini, shredded
1/4 cup Swiss cheese, shredded
4 eggs, lightly beaten
½ cup grated parmesan

1cup biscuit (pancake) mix
¼ cup oil
2 green onions, chopped
1 tsp dried dill weed
1 unbaked 9” deep-dish pie crust (optional)

1. Preheat oven to 350
2. In large bowl, combine all ingredients (except pie crust)
3. Pour into greased 9” quiche dish (or unbaked pie crust)
4. Bake uncovered 45 minutes or until cooked in middle
