Makes about 6 servings
2 cups uncooked brown rice
1 cup uncooked split peas
1 cup onion, diced
¼ cup oil
¼ cup flour
3/4 cup water
2 TB ketchup
1 cup cheese, shredded
1. Put peas in 3 cups water & bring to boil. In separate pot put rice in 4 cups water & bring to boil. Cover & cook rice & peas on low, 45 minutes (peas may need up to twice as long to get mushy)
3. Heat oil in pan & sauté onions; add flour & stir. Add water, ketchup, & cheese to pan; stir until cheese is melted
4. Add cheese mixture to peas & stir. Serve pea sauce over the cooked rice.
