Aimee’s Vegetarian Pasta Sauce


Makes 6 servings

8 ounce package tempeh or seitan
1/3 cup olive oil
¼ cup chopped onion
4 cloves garlic, chopped
6 plum tomatoes-chopped & blended

1 can diced tomatoes (14 oz.), drained
pinch of nutmeg
1 tsp basil

1 tsp garlic salt
1 TB dried parsley
1 TB sugar
1 TB oregano
salt & pepper to taste

Place tempeh or seitan in food processor & pulse into crumbles.  Heat oil in saucepan over low heat; cook onion & garlic 2 minutes. Stir in rest of ingredients; add water if necessary for desired consistency. Simmer at least 1 hour. Serve with pasta.
