Buttermilk Pancakes

Makes 14-16 three-inch pancakes

1 cup flour
1 TB sugar
½ tsp salt
½ tsp baking soda
1 egg
1 ¼ cup buttermilk
2 TB butter, melted
½ tsp vanilla

1. Combine flour, sugar, salt & baking soda
2. In another larger bowl, beat egg; stir in buttermilk, vanilla, & butter
3. Stir dry ingredients into wet; adjust consistency if needed by adding flour or buttermilk
4. Cook on oiled pan
