Seitan "Meat"balls

Makes 18

½ cup pecans (or almonds)
16 oz. seitan, cut into pieces
½ cup bread crumbs
1 TB parsley
1 TB basil
1 tsp dried minced onion
1 tsp oregano
1/4 tsp garlic salt
1 tsp tamari
2 eggs, beaten
3 TB olive oil

1. Preheat oven to 400.  Chop nuts into a fine powder in food processor; transfer to large bowl.  Stir in bread crumbs, parsley, basil, onion, garlic salt, & oregano.
2. Pulse seitan in food processor until crumbly; stir into nut mixture along with tamari, eggs, & 1 TB olive oil. 
3. Shape mixture into 18 one-inch balls; place on greased baking sheet & brush with 1 TB olive oil.
4. Bake 12 minutes; turn balls over & brush with remaining olive oil; bake 12 minutes more or until crusty & lightly browned.  Serve with pasta & sauce.

Option: form balls around small chunks of fresh mozzarella.
