Tofu-Millet Burgers

Makes 10 patties

1 cup millet
2 cups water
1/2 tsp salt
1 TB butter
2 TB sesame seeds
2 TB sunflower seeds
1 cup tahini (sesame seed paste)
1 egg, beaten
2 TB ketchup
1 TB minced onion
1/2 block (7 oz.) tofu, mashed
cheese slices (optional)

1. Stir millet, water, salt, & butter in pot & bring to a boil. Reduce heat, cover & simmer 20 minutes; let cool
2. Meanwhile, preheat oven to 350° . Grind sesame & sunflower seeds in food processor; set aside.
3. Add ground seeds, tahini, tofu, eggs, onion, & ketchup to cooked millet & stir until well-combined
4. Make patties (use wet hands) & put on oiled cookie sheet
5. Bake 30 minutes then broil on high about 3 minutes per side (add optional cheese for last 3 minutes of broiling)
These patties freeze well, so you can save the leftovers!
