Banana Walnut Muffins

Makes 12 muffins

1 cup oats
½ cup chopped walnuts
1 cup whole wheat flour
1 cup brown rice flour
4 tsp baking powder
1/8 tsp salt
6 oz. soft tofu, cubed
¼ cup oil
¼ cup honey
1 ¼ cups apple juice
2 small ripe bananas

1. Preheat oven to 375. In large mixing bowl, combine oats, walnuts, flours, baking powder, & salt.
2. Put tofu, oil, honey, apple juice, & bananas in blender; puree until smooth and stir into flour mixture
3. Spoon batter into oiled muffin tin; bake 25 minutes or until lightly browned.
