Penne with Red Pepper Sauce & Broccoli

Makes about 6 servings
2 TB oil
1 ½ cups chopped onion
2 large cloves garlic, chopped
2 red peppers, chopped
¼ cup almonds
2 tsp balsamic vinegar
¼ cup olive oil
½ tsp salt
2 crowns broccoli, chopped
16 oz. penne pasta
1/3 cup parmesan
½ cup fresh basil leaves, chopped
1. Saute onions in 2 TB oil; add garlic & red pepper; cook about 15 minutes
2. Chop almonds in a blender; add onion mixture, vinegar, olive oil, & salt; blend until smooth
3. Steam broccoli until crisp-tender
4. Meanwhile, cook pasta according to package directions; drain & return to pot; add sauce, broccoli, parmesan cheese, & basil; heat through
