Zucchini-Goat Cheese Pilaf


Makes 6 servings

½ cup chopped onion
2 cloves garlic, minced
2 TB olive oil
2¼ cups water
1 box (6 ounces) long grain wild rice mix
4 ounces goat cheese, crumbled
2 cups diced zucchini
2 Roma tomatoes, seeded & chopped
1 tsp dried rosemary
salt & pepper to taste

1. Preheat oven to 350
2. In large saucepan heat olive oil; cook onion & garlic
3. Add water; bring to boiling & stir in rice mix with seasonings
4. Simmer 25 minutes or until most of the water is absorbed
5. Stir in goat cheese until melted
6. Stir in zucchini, tomatoes, rosemary, salt & pepper
7. Transfer mixture to a greased baking dish
8. Cover & bake 40 minutes
