Three-Grain Sunflower Muffins

Makes 12 muffins
1 cup milk
1 stick butter, melted
1 egg, beaten
½ cup applesauce
1 cup all-purpose flour
½ cup whole wheat flour
½ cup cornmeal
½ cup rolled oats
½ cup firmly packed brown sugar
¼ cup plus 2 TB sunflower seeds
1 TB baking powder
½ tsp salt
1. Preheat oven to 400. Combine milk, butter, egg, & applesauce in large bowl.
2. Combine flours, cornmeal, oats, brown sugar, ¼ cup sunflower seeds, baking powder, & salt in medium bowl. Stir flour mixture into milk mixture until just moistened.
3. Spoon batter evenly into greased muffin tin. Sprinkle tops evenly with 2 TB sunflower seeds. Bake 15-18 minutes or until golden brown.
