Brown Rice & Tofu Casserole


Makes 4-6 servings

1 cup uncooked brown rice
1 can tomato sauce (8oz.)
½ cup diced onion
1 green pepper, chopped
1 clove garlic, chopped
1 egg, beaten
½ block tofu, mashed
salt & pepper to taste
½ cup bread crumbs
1 1/2 cups cheese, shredded

1. Cook rice in 2 cups water; set aside
2. Meanwhile, preheat oven to 350. Saute onion, pepper, & garlic; add to cooked rice & mix. Add egg, tofu, salt & pepper; mix.
3. In oiled baking dish, layer ½ rice mixture, ½ tomato sauce, ½ cheese, ½ bread crumbs; repeat layers. Bake 30 minutes, covered.
