Vegetarian Steak & Beans



2 cups brown rice
4 cups water
2 TB oil
1 cup sliced mushrooms
1 cup chopped onion
1 TB minced garlic
1 cup green pepper
½ TB basil

½ tsp pepper
8 ounces seitan, cut up
3 TB tamari
1 can diced tomatoes (15oz.)
1 can pinto beans (15oz.)


1. Cook rice in water & set aside
2. Meanwhile, heat oil in large skillet. Stir in mushrooms, onions, green pepper, garlic, basil & pepper; saute until tender, add seitan & cook until browned
3. Stir in tamari, tomatoes, & beans; cook 15 minutes.  Serve over rice.
