Tofu “Crab” Cakes

Makes 8 patties

12 oz. extra-firm tofu: frozen, thawed & mashed
¼ celery, finely chopped
1 TB minced onion
1 large egg, beaten
1/2 cup bread crumbs
¼ tsp mustard powder
½ tsp sugar
½ tsp paprika
2 TB wheat germ
1/2 tsp salt
¼ tsp grated lemon peel
1/4 tsp black pepper
2 TB mayonnaise
1 tsp Worcestershire sauce


Preheat oven to 350.  Mix all ingredients together. Form the mixture into patties 2 inches across. Place on oiled baking sheet; bake 10 minutes per side.  Serve with tartar sauce.
