Black Bean Burgers


Makes 5-6 patties

1 can black beans (15 oz.), drained
1 can diced green chiles (4 oz.), drained
1 cup seasoned bread crumbs
2 TB minced onion
1 egg, beaten
¼ cup cornmeal (optional)

1. Coarsely mash beans with fork; transfer to a bowl
2. Mix in chiles, crumbs, egg, & onion; refrigerate at least 1 hour
3. Make 5 patties & coat with cornmeal; place on oiled baking sheet
4. Broil on high 5 minutes per side; grill or bake at 350 until heated through
